Ingredients
Wholemeal crumpet, toasted, 2 crumpet(s)
Olive oil spray, 1 spray(s)
Banana, 2 small (130g with skin)
Ricotta cheese, reduced fat, 60 g
Honey, 2 teaspoon(s), or maple syrup
Cooking instructions
Lightly toast the crumpets in a toaster or under a hot grill for 3 minutes or until browned to your liking.
Meanwhile, spray a non-stick frypan or grill with olive oil; set to medium heat. Peel the bananas and slice in half lengthways. Cook the bananas for around 1–2 minutes each side or until golden.
Divide the crumpets between two plates. Stack each crumpet with one piece of banana, ricotta and then the remaining banana. Drizzle with honey or maple syrup and serve.
